Analyses of frying oil and shelf-life control of fried products

Analyses of frying oil and shelf-life control of fried products with CDR FoodLab®

Does your company produce fried foods? Forget about titration to determine the acidity in frying oil!

You can check the state of degradation of the oil you are using with the CDR FoodLab® analysis system in a much simpler and faster way directly in production facility, even if you have no experience of laboratory techniques.

What can you analyse?

It is possible to check the quality of cooking oils, such as frying oils, used oils, waste vegetable oils in the unaltered state, but also the shelf-life of finished products such as fried snacks, by monitoring their oxidation state.

The shelf-life of fried products, in 3 easy steps

With CDR FoodLab® you can check the shelf-life of fried products such as snacks by periodically monitoring the oxidation state and rancidity of the oils they contain.

Thanks to a simple cold extraction with an aqueous solution (CDR Extrafluid), you will monitor the oxidation state and rancidity of the oils contained in the different products, through periodic analyses of acidity, peroxides and p-anisidine, which can be carried out in a few minutes.
The risks for the operator are eliminated and the environmental impact is minimised.

The state of the frying oil over the course of time: Peroxides, p-Anisidine, TOTOX

CDR FoodLab® is the ideal solution to check the quality or progressive degradation of a cooking oil, offering accurate and precise data on the state of an oil at a certain point in time. The system allows an in-depth level of analysis through the p-Anisidine test, which is the index parameter for secondary oxidation of the oil. An index, TOTOX, can therefore be obtained, given by the following formula, Anisidine + 2 Peroxides. This makes it possible to discover the complete oxidative history of an oil and thus its overall condition.

Reliable

The instrument ensures results in accordance with reference methods. The use of LED reading cells guarantees high sensitivity, a wide measuring range and excellent repeatability of the results.

image

Simple

The analytical methods are simpler than traditional ones. The system can be used not only in the laboratory, but also on the production line in real time, by non-expert operators. In addition, the instrument has a Help function for step-by-step user guide.

Fast

The methods developed in CDR laboratories speed up the analysis procedures:  sample preparation is absent or very simple and analyses are carried out in just a few steps. It is possible to analyse several samples simultaneously or manage the determination of several analytical parameters at the same time of the same sample.
